Chicken Basil, Egg Salad on Wisecrackers

Another beautiful weekend.  The smell of the sun & fresh spring is truly a welcome after a long winter.  And to start off this beautiful season, I shall make a very simple, very healthy dish.  Some may say this dish is more of an appetizer but eat enough of these, your tummy will be satisfied.  And if you are a gym rat like me, your protein intake will be doing the happy dance with this dish.  Your protein, carbs and veggies all in one bite. :D


I found these delicious crackers from Costco.  You say, crackers? delicious? what? Believe me, if I hadn't had these crackers, I would say the very same thing.  Go ahead, give it a try! You may even replace your chips for these yummies. :D 


Chicken Basil Salad
Dice the meat from a roasted chicken (from grocer)
In a bowl, add a slice of diced red onion, 1 1/2 tbsp of mayonnaise  1 tbsp of gourmet mustard, salt and pepper, 2 tsp of dried basil, 1 tsp of dried oregano, a dash of cayenne pepper and the juice of one lemon.  (I didn't have any fresh herbs on hand but if you do, please use them! fresh is always best!) Mix.
Add the dice chicken.  Mix well and you are done!

Egg Salad
Place 3-4 eggs in a pot of water.  Bring the pot to boiling point, once the water starts to roll, turn off the heat and cover the pot for 10mins.  After, rinse eggs in cold water and remove shells.  Rinse eggs again to ensure no shells stick on the eggs. Pat dry and set aside. 

In a bowl, add a slice of diced red onion, 1 tbsp of mayo, 1tsp of gourmet mustard, salt and pepper, dried chives, a dash of cayenne pepper, a dash of chili powder and the juice of one lemon. Mix.  Then add eggs, smash the eggs as you mix the sauce together. 

Assemble with your choice of vegetables, cheeses, sprouts, capers, really, whatever you want! Eat and be guilt free. :D
